I am on a non profit community board. Over the last month we had the Secretary, Vice President and Treasurer resign naming the end of the month as their final day. Is there anything that states we no longer need to adhere to the date specified in their resignation letters? Or can the new board call a special meeting and vote to accept their resignations affected upon immediate.

It sounds like they are giving notice like someone who is quitting a job. When the board accepts their resignation a vacancy is created and then needs to be filled immediately. So yes the board can meet and accept the resignations now. Then inform them of that fact and ask for all minutes and other information to be turned into the board. Then it can be passed on to the next people.
